Roast Chicken With Apricots and Olives
This dish is reminiscent of the iconic Silver Palate's Chicken Marbella from the '70's, but instead of prunes this dish uses apricots, which are much less sweet, and become almost savory as they roast. Sitting in a complex sweet and briny marinade overnight, the dish is packed with tons of flavor. Plus you've done the work of putting it all together the day before so makes roasting and serving a breeze the day of presenting to friends or family.
