Banana Cream Pie!

I made a Banana Cream Pie the other day for my friend Joann (whose nick name is the same as my cat, JoJo!). Turns out it is her favorite. She told me growing up she would request for her birthday instead of cake! This recipe is so easy; light, but creamy. I topped the pie with whipped cream, but forgot to take a photo. You can also decorate with banana slices.

The recipe is from All Recipes (www.allrecipes.com). They make their pie using a traditional flakey crust. I used a graham cracker crust (recipe is on my previous blog).

Ingredients:
3/4 cup white sugar
1/3 cup flour
1/4 tsp. salt
2 cups milk
3 egg yolks, beaten
2 Tbsp. butter
1 1/2 tsp. vanilla
1 (9″) pie crust, baked
4 bananas, sliced (I used 3 as mine were huge.)

Preparation:
Preheat oven at 350 degrees.
In a saucepan, combine the sugar, flour, and salt. Add milk gradually while stirring gently. Cook over medium heat, stirring constantly until the mixture is bubbly. Keep stirring and cook for about 2 more minutes, and then remove from heat.
Stir a small quantity of the hot mixture into the beaten egg yolks to temper the yolks (so you don’t end up with scrambled eggs!). Once tempered slowly add the rest of the yolks to the hot mixture. Return to heat and cook another few minutes. Remove from the stove. Add butter and vanilla. Stir until the whole thing has a shiny and smooth consistency.
Slice bananas into the cool, baked pie shell. Top with pudding mixture. Bake at 350 degrees for 12 to 15 minutes. Chill at least one hour.
