Mango Salad with Pickled Red Onion and Fresh Mozzarella Cheese

THE KING OF FRUITS

Mangos have been around a long time. In fact, they date back more than  5000 years originally found in the foothills of the Himalayas in India. Known as “The King of Fruits“, they have been cultivated for 4000 years. Mango seeds, traveling with traders along various trade roots, helped them spread to many different countries.

Today mangoes are grown in many sub-tropical regions with India, China and Thailand being major producers. They are also grown here in the states in Florida where a seedling program has produced many different varieties. California is also a mango producer and Mexico exports a huge number of mangoes to the US.

Here is the salad ‘undressed’. I used a beautiful Spicy Mango balsamic to dress it. Flavor-wise it was perfect.

Appearance-wise not so much. Next time I am going to use a white balsamic vinegar.

The ingredients in this salad sound unlikely, but they work very well together. You don’t have to pickle your own red onions, but I did and if you’d like that recipe just shoot me an email. The brine is really easy to make and it’s kind of fun.

Salad ingredients include: Mango, Pickled Red Onion, Fresh Mozzarella Cheese, Basil, Mint and Black Pepper, all dressed with a Spicy Mango Balsamic Vinegar.

The most difficult part of this recipe is peeling and chopping the mango! Slice down along both sides of the large seed. Do not get too close to the seed as the fruit becomes very fibrous, but there is still lots of good meat that you can cut out around the seed. Just avoid the fuzzy fiber. I love the color of mango flesh contrasted with the beautiful reddish green skin.

We are fortunate to live near a fabulous olive oil store with many different flavors offered. The Spicy Mango vinegar is actually what inspired me to make this salad.

Once you have peeled and chopped two mangoes into bite-size pieces, add 1 cup of diced fresh Mozzarella cheese, 4 Tbsp. pickled onions, 3 Tbsp. each of chopped basil and mint, 1/2 tsp. sea salt and a generous sprinkling of freshly ground black pepper. Mix all ingredients together and top with Balsamic vinegar.

That’s it! Very easy and so refreshing!

Mango Salad with Pickled Red Onions and Fresh Mozzarella Cheese

This is a different combination of flavors offering a very refreshing bite!

Ingredients

  • 2 lge. Mangoes, cubed
  • 1 cup Fresh Mozzarella Cheese, cubed
  • 4 Tbsp. Pickled Red Onion
  • 3 Tbsp. Basil, chopped
  • 3 Tbsp. Mint
  • 1/2 tsp. Sea Salt
  • Generous amount freshly ground black pepper

Instructions

  • Peel and chop the mangoes into bite-sized pieces.
  • Mix all other ingredients, except the black pepper, together and stir well to distribute the ingredients.
  • Top with freshly ground black pepper.
