Sweet and Spicy Nuts
Who doesn’t like a mixture of salt, spice and sweetness in a snack. I figured after all the cooking and baking you’ve done over the holiday it’s time for a super simple, fun and delicious snack. I did make these at Christmas, but they would be good any time of the year and especially nice on New Year’s Eve.

Change up the spices as you like, but I have to say this combination works really well. You can also use whatever nuts you prefer. I used a combination of walnuts, pecans and slivered almonds to make 4 cups.


Start by preheating the oven to 300 degrees. Cover a rimmed baking sheet with foil and then cooking spray. In a small bowl whisk brown and white sugars with the salt, chili powders, cinnamon and cayenne pepper.

In a larger bowl whisk the egg white until frothy.

Add 4 cups of nuts to the frothed egg and then all the sugar and spices. Toss to coat evenly. Spread out the nuts on the prepared baking sheet and bake for about 45 minutes, stirring once until the nuts are nice and browned.

Let them cool on the baking sheet stirring occasionally as they will stick together when they bake, but getting a big, bite of nut cluster is not a bad thing!! When completely cool, store in zip lock bags.

- 3/4 cup White granulated sugar
- 2 Tbsp. Light brown sugar
- 1 Tbsp. Kosher salt
- 1 tsp. Chili powder
- 1 tsp. New Mexican chili powder
- 1 tsp. Cayenne pepper
- 1/2 tsp. Ancho chili powder
- 1/2 tsp. Smoked paprika
- 2 tsp. Cinnamon
- 1 lge Egg white
- 1 1/3 cups Walnut halves, raw When the nuts are all mixed you want 4 cups.
- 1 1/3 cups Slivered almonds, raw
- 1 1/3 cups Pecan halves, raw
Instructions
- Preheat oven to 300 degrees. Cover a rimmed baking sheet with foil. Spray with cooking spray.
- In a small bowl, whisk the brown and white sugar, salt, chili powders, smoked paprika and cinnamon. In a larger bowl, whisk the egg white until frothy. Add the nuts to the egg white along with the sugar/spice mixture and toss to cover thoroughly with the egg white.
- Spread the nuts out on the prepared baking sheet and bake for about 45 minutes, stirring once, until nicely browned.
- Let the nuts cool completely on the baking sheet, stirring occasionally to break up the larger clumps of nuts. Once cooled, store in zip lock bags or tightly covered containers.
