Easter 2025 At The Rabbitt’s

Our first roses of spring. Bloomed this week just in time for the holiday!
Easter is my favorite holiday. And spring is my favorite time of year. New beginnings, endless possibilities, hope, and a time for reimagining life. This year, my husband Jerry and I, are having a quiet Easter for two.
I bought a 10 lb. Berkshire ham from my favorite fancy food purveyor, D’Artagnan. I hope we have enough for two!
I want to share our Easter menu with you and over the next few weeks I will provide the recipes. I am baking the ham with a Mandarin Orange Ginger glaze. The house smells amazing already and I haven’t even put the ham in the oven!
When I’m not in the kitchen you will often find me with my hands in the dirt!
Our flowers are bursting into bloom!

Loaded with buds and blossoms, which hopefully means a bumper crop of Pomegranates!
We’re also going to have one of my favorite holiday sides: Spinach Souffle. This is not really a souffle as it doesn’t puff up; more like a light and delicious casserole with lots of cheese. It’s very easy to put together and you can assemble in advance and bake it just before your holiday dinner. I thought I blogged it some time ago, but when I updated my blog a couple of years ago some of the old recipes didn’t make the transition, so recipe coming soon!
Dessert for today’s meal will be my Nanna’s Lemon Sponge Pie. We had this pie so many years growing up at holidays. It’s a special pie and brings back many fond memories of holiday meals at my grandparents, Hattie and Willie Asbell, in Alstead, NH. Very lemony and wonderful texture. When it bakes, a light, cakey sponge is formed at the top of the pie and the bottom half becomes a very creamy lemon custard. I just made the pie crust, which always make me super nervous, but this time it came out great!

Applewood Smoked Berkshire Ham with Mandarin Orange and Ginger Glaze

Hi Claire! Happy Easter! So thrilled to hear from you. Hope you and Tom have had a perfect Easter. This is a ridiculously large ham for 2 people, but for sure I am making a Quiche Lorraine. I also love ham salad and we both are fans of ham sandwiches. Maybe a pea soup? Although our temps are in the 80’s now so kind of the wrong season. I will need to get creative! Hope all is well in your world. Miss you and one of these days would LOVE to get together!!

Thank you! Happy Holidays to you, too. I thought today was going to be easy squeezey since just two of us, but I just took my Nannas pie out of the oven. When did cooking a big meal get so exhausting?!?…but I still love it. We’ll have a slice of Lemon Sponge pie at midnight. Let’s catch up next week. Let me know what’s good.

Not really, but it feels like it! Western omelettes for breakfast. I’m thinking ham salad; ham croquettes; possibly pea soup, but it’s pretty hot now; some kind of a ham and pasta or risotto dish…well, you get the idea! :-) Hope your day was filled with family, feasting and fun!!
