Shrimp Dip
Simple, but elegant. Very easy to put together and it certainly is a crowd pleaser! If you like shrimp, you will love this dip!

Start by bringing the cream cheese to room temperature. Either using a stand mixer, your hand held or mini food processor, combine the cream cheese, once softened, with mayonnaise, lemon zest and juice, and salt. Zest the lemon right into the food processor.

You’ve probably made Shrimp Dip many times, but there was something about this combination of ingredients that made it perfect. Plus, it makes a large amount so you can use on a couple of different occasions.

This time I served with crackers and cukes.
Beat on medium speed until completely smooth and creamy. Scrape down the sides of the bowl with a rubber spatula, then add scallion and parsley. Mix on low speed until well combined.

I used these wild-caught baby shrimps, already shelled and cooked, which made things very easy. I have never used these tiny shrimps before. I will definitely use them again. They were delicious!
Fold the shrimp into the dip. Transfer to a serving bowl. Cover and refrigerate for at least an hour or up to overnight. Top with parsley and serve with cucumbers, crackers or cocktail sauce.

Shrimp Dip
Ingredients
- 1 1/2 8 oz. Packages cream cheese, softened at room temp
- 1/4 cup Mayonnaise
- 1 tsp. Lemon Zest
- 1 Tbsp. Lemon juice, more to taste
- 1/2 tsp. Salt
- 3 Scallions, thinly sliced
- 2 Tbsp. Parsley, chopped, plus more for topping
- 8 oz. Shrimp If you use the baby shrimps, no need to cook, clean or chop.
Instructions
- Bring cream cheese to room temperature until softened. Combine cream cheese, mayo, lemon zest and juice and salt. Beat on medium speed until completely smooth and creamy.
- Scrape down the sides and bottom of the bowl with a rubber spatula, then add scallions and parsley. Mix on low speed until just combined.
- Use a rubber spatula to fold the shrimp into the dip. Transfer to a serving bowl. Cover and refrigerate at least 1 hour or up to overnight.
- Top with more parsley and serve with crackers, cucumbers or cocktail sauce.
