Parsley Pesto
Very flavorful and so simple to put together.
- 4 Cups fresh flat-leafed parsley
- 3 Tbsp. Pine nuts
- 3 tsp. Lemon juice, freshly squeezed
- 1 lge. Garlic clove, minced
- 3 Tbsp. Parmesan cheese, freshly grated
- 8 Tbsp. Olive oil
- Pinch of salt and freshly ground black pepper
